Selection of the best wood

The Allary cooperage uses only first quality clear staves from well managed ONF (National Office Forest involved in the sustainable management of the public forests).
We have a long history of being respectful for Forestry management and
throughout the years have developed a network of professionals with
access to the best oak. We purchase our oak through these few quality
suppliers.
Our selection:
-100% forest of
Tronçais,
extra-tight grain Oak is advised for top of range and structured wines
(Allary Prestige barrel).-Center of France and
Vosges regions, tight and medium grain French oak for wine production.
-Limousin region, loose grain French Oak for alcohol.

American Oak is selected from only a few stave mills in Missouri (USA) specializing in slow growth northern oak.
